Recept Tunisian Tajine

This dish was prepared by our students in collaboration with our volunteer Khalil. I hope you like the prepared dish.

Ingredients

• 1 tsp oil

• 1 onion, diced

• ½ lb chicken breast, diced (roughly one breast)

• 1 ½ tsp coriander seed, ground

• ¾ tsp cumin

• ¾ tsp salt

• ½ tsp caraway seed

• ¼ tsp red pepper flakes

• ¼ tsp black pepper

• ¼ c water

• 1 russet potato, peeled and diced

• 8 eggs, beaten

• 3 oz (3/4 c) Swiss cheese, grated (or other white cheese like Gruyere, Monterey Jack, Gouda, etc)

• ½ c fresh parsley, chopped

 

Instructions

Preheat the oven to 350F.

In a large skillet, heat oil. Add diced onions and sauté over medium high heat for 2-3 minutes, until they begin to soften. Add diced chicken and spices.

 

Mix to combine.

Add the water to the skillet and simmer until the liquid has evaporated, 2-3 min.

Add the potatoes and sauté for an additional 2-3 minutes, until

slightly tender.

Remove the mixture from the heat and pour it into a greased 8x8 baking dish.

Mix the beaten eggs with 2 oz (1/2 c) of grated cheese and the chopped parsley.

Pour the eggs over the chicken mixture in the baking dish. Top with the remaining 1 oz of grated cheese.

Bake the tajine for 35 minutes, or until the middle is set and the top is golden.

Remove from the oven and let the tajine rest for 10 minutes before cutting. (This will help it set and make it easier to cut.)

Cut the tajine into 8 rectangles and serve warm or cold.

Sastojci

• 1 žličica ulja

• 1 luk narezan na kockice

• ½ lb pilećih prsa, narezanih na kockice (otprilike jedna prsa)

• 1 ½ žličice  mljevenog korijandera

• ¾ žličice kima

• ¾ žličice soli

• ½ žličice sjemena kima

• ¼ žličice pahuljica crvene paprike

• ¼ žličice crnog papra

• ¼ c vode

• 1 crveni krumpir, oguljen i narezan na kockice

• 8 jaja

• 3 oz (3/4 šalice) švicarskog sira, ribanog (ili drugog bijelog sira kao što je Gruyere, Monterey Jack, Gouda, itd.)

• ½ šalica svježeg peršina, nasjeckanog

 

Upute

Zagrijte pećnicu na 350F.

U velikoj tavi zagrijte ulje. Dodajte luk narezan na kockice i pirjajte na srednje jakoj vatri 2-3 minute, dok ne počnu omekšavati. Dodajte piletinu narezanu na kockice i začine.

Miješajte dok se sjedini.

Dodajte vodu u tavu i pirjajte dok tekućina ne ispari, 2-3 min.

Dodajte krumpir i pirjajte još 2-3 minute, dok ne bude

blago nježna.

Maknite smjesu s vatre i izlijte u nauljenu posudu za pečenje 8x8.

Pomiješajte razmućena jaja s 2 (1/2  šalice) ribanog sira i nasjeckanim peršinom.

Prelijte jaja preko smjese za piletinu u posudi za pečenje. Prelijte preostalom 1 ribanog sira.

Tajine pecite 35 minuta, odnosno dok se sredina nestvrdne, a vrh ne porumeni.

Izvadite iz pećnice i ostavite tajin da odstoji 10 minuta prije rezanja. (To će mu pomoći da se lakše servira i izreže.)

Tajine izrežite na 8 pravokutnika i poslužite tople ili hladne.
